The Sagrantino-Wine is produced with native grapes that Franciscan friars brought back from Asia Minor to Monefalco. Although today Sagrantino is mainly produced under the label „Secco“, it presumably used to be produced and classified almost exclusively as „Dolce“, the grapes being dried on wooden slats for several months.
For the Secco und Passito (liqueur wine) the product regulations prescribe that this DOCG – quality wine must be kept for at least 31 months and in the case of the “secco” the regulations require that for at least 12 of these 31 months the wine must be kept in wooden barrels. This guarantees the maturation into at a ruby-red to garnet colored wine with a fine blackberry flavor and a warm, aromatic taste.
